Sloppy Joes and Salad

To make this humble dish more elegant, pronounce it “SLOO-PEE HO-ZAYS and SAH-LAHD” to impress your friends ;-p
Sloppy Joes
Brown 2.5 lbs hamburger
drain fat
add diced onion (1 small onion)
add diced green pepper (appx 1/4 of a pepper)
add salt and pepper to taste
add ketchup until ground beef is generously covered
add appx 1 medium squeeze of mustard
add appx 1 medium squirt of “Open Pit” BBQ sauce
simmer appx 20 min
warm buns (steam works great!)
Salad:
iceberg lettuce leaves
tomatoes (peel skin off tomatoes)
sliced strawberries
broccoli
glazed almond and pecan pieces
dressing of your choice

Mom’s Homemade Potato Salad

- boil 6 medium potatoes for 1 hr
- boil 6 eggs
- peel potatoes
- dice potatoes
5. mix all the following in one big bowl:
- diced potatoes
- diced celery (optional)
- 1-2 green onions diced
- 7-8 oz Hellmann’s mayonnaise (yes, the brand is EVERYTHING!)
- salt and pepper to taste
- appx 1 TBS pickle juice
- sprinkle paprika on top for decoration
And there you have it! Mom’s famous homemade potato salad!! Enjoy!

KAPUSTA-OFF!!! Kielbasa and Kapusta by Keith Nakon

Ingredients:
- 2 large yellow onions
- 2 tbs butter
- 64oz sauerkraut
- salt
- pepper
- 3 links home-style smoked kielbasa
- 14oz mushrooms
- paprika
- 3 links fresh polish sausage
Step 1:
- dice 2 large yellow onions – add to stove-top pan
- add 2 tbs butter to pan
- cook 5-10 minutes on med-low heat, stirring occasionally
**while onions are cooking….
- strain and rinse 64oz sauerkraut
- strain as much water out of the sauerkraut as possible
- add sauerkraut to pan
- add desired amount of salt and pepper to pan
Step 2: (while sauerkraut is cooking…)
- preheat oven to 350 degrees
- slice home-style smoked kielbasa (3 links) into appx 1/2″ pieces
- open and strain 14oz sliced mushrooms, add to pan
- add more salt, pepper and paprika to sauerkraut
- lay sliced smoked kielbasa pieces on top of sauerkraut
- lay fresh polish sausage (3 links) on top
Step 3:
put in oven for 30-45 min (for those of you who don’t have an awesome pan like Keith, you will have to transfer . the kraut and sausage to a baking dish before performing this step)
Step 4:
- take Kraut & Kielbasa out of oven
- cut up fresh polish sausage links on top
- stir
- add more paprika to kraut
Step 5:
- return Kraut & Kielbasa to oven
- cook another 30-min
Step 6:
- take Kraut & Kielbasa out of oven
- stir
- return Kraut & Kielbasa to oven
- cook another 30 min

Kapusta

Kapusta [kah-POOS-tah], the Russian, Hungarian, Polish, Ukrainian, and Slovak word for cabbage, is a popular dish in Polish and Slovak cooking.
ingredients
2 cans sauerkraut
potato
1 onion
Step 1:
1. drain sauerkraut
2. rinse sauerkraut
3. squeeze out excess water
Step 2:
1. add appx 1 cup water to pot
2. add sauerkraut
3. add a potato to taste. This will mild the sourness of it.
4. simmer on low heat 1.5 hrs – occasionally add more water as needed
while simmering…..
Step A:
1. fry 1 onion in pan
2. add 1 scoop of sauerkraut to onions to caramelize
3. when onions are done, transfer contents to sauerkraut pan
Step B:
1. boil sausage in 1/4 cup water for 8-10 min
Step 3:
1. drain and rinse sauerkraut a final time

Badass Bellaire Cajun Salmon w/ Special Guest Marty
April 17, 2011
1. buy the fish (salmon)
- recommended that it should have 1 side with skin
2. rinse the fish!
3. Make the Sauce
appx 9 parts mayo, 1 part mustard, and desired amount of cajun seasoning
in this episode, for 9 lbs of salmon we used:
- appx 3 cups mayonnaise (“a lot” says Marty)
- appx 1/3 cup Grey Poupon dijon mustard (“a little” says Marty)
- appx 3 tbs cajun seasoning
4. Lay salmon on foil-covered cookie sheet, skin side down
5. Spread a generous amount of sauce over each filet of salmon
6. Bake at 350 degrees for appx 10 min
7. Place salmon in the broiler for 5 min
8. let the salmon cool for appx 15 min
While the fish is cooking……………..
Make Rice
- Ratio: 1 cup Basmati Indian rice to 1.5 cup water (Because it’s the best!)
- bring to boil, then turn down to simmer for 20 min
Make Broccoli
- Steam for appx 15 min
BON APPETIT!!
**disclaimer: it is recommended NOT to eat the fish skin. Just sayin….
